  1. Lightly grease a 4x8 loaf pan and preheat the oven to 350°F (175°C)
  2. In a large bowl mash the bananas. Then mix in 1/4 of oil.
  3. Add in the sugar and vanilla extract and mix well. Then sprinkle in the salt and baking soda.
  4. Lastly, mix in the flour. This can be done all at once or 1/2 cup at a time. Make sure no clumps of flour can be seen.
  5. Pour the batter into the greased loaf pan and bake for 1 hour.
  6. Carefully remove from the pan and allow to cool on a rack. If not being served immediately, cover in saran wrap or aluminum foil. Can be frozen for up to a month.
