  1. In a Dutch oven, cook bacon over medium heat until crisp. Set aside, reserving 1 TBS bacon drippings.
  2. Saute onion in drippings until tender. Add garlic and cook for as additional minute.
  3. Stir in broth, pumpkin, salt, nutmeg and pepper.
  4. Bring mixture to a boil, reduce heat and simmer, uncovered, for 10 minutes.
  5. Remove from heat and allow to cool slightly.
  6. In a blender, process soup in batches, until smooth.
  7. Return all to pan, stir in cream; heat through.
  8. Add cheese and stir until melted
  9. Place in serving bowls, topping each serving with parsley, bacon crumbles and additional cheese if desired.
