  1. Preheat oven to 375 degrees Fahrenheit
  2. Chop turkey sausage up into fine pieces and place in a bowl with diced cranberries, carrots, raisins and crumbled bread crust
  3. Add eggs and light cream to turkey mixture and combine all ingredients together. Set aside
  4. For the crust blend flour and salt together then add chilled lard. Cut lard with a pastry blender until it is the size of a small pea
  5. Using a fork slowly add ice water to flour mixture and blend together to make a smooth dough that comes away from the sides of the bowl
  6. On a lightly floured surface roll out dough and using a round lid or container measuring 4 1/2" in diameter cut out 6 rounds and place in muffin cups with a 1/4" of dough around the top edges of the cup
  7. Fill tarts with turkey mixture 2/3 full and bake for 30 minutes in preheated oven until lightly browned on the crust and filling tests done in the middle
  8. Allow 5 minutes for tarts to cool before removing from pan to a serving plate
