Spicy Kale and Shrimp Soup

  1. In a large saucepan heat oil over medium low heat. Add onion, carrots, mushrooms and garlic. Cook, covered for 5-7 mins or until vegetables are tender, stirring occasionally.
  2. Add broth and basil to vegetable mixture. Bring to boil, reduce heat and simmer, covered for 10 mins. Stir in kale, Curry paste, salt and pepper. Return to boil, reduce heat to simmer for 10 mins.
  3. Stir in shrimp, tomatoes, beans and lemon juice. Simmer covered for 10 more minutes until kale is tender.
