"This is more of a moist dense cake than bread, but it is one of the easiest and most useful recipes I've ever used. I've made the cake several times, and despite different alterations and substitutions, it has always turned out fabulous. It's a great way to use up that extra fruit from the tree, and the whole family loves it."
Pre-heat oven 325 degrees F. Mix first 5 ingredients in one bowl. In a separate bowl, mix together sugar and oil, then add eggs and vanilla, and then stir in apples, pecans, and raisins(if desired). Add flour mixture and mix well. Pour batter evenly into well greased 9x13 baking dish. Bake for 50-60 min or until inserted knife/toothpick comes out clean. Cool 10 minutes before serving. Can freeze to keep.
