  1. Spray crock pot with cooking spray. Scrub about 3 medium potatoes and cut into small chunks, leaving the skin on. (If you cut the spuds into too large a size pieces, they will take too long to cook since everything else is basically done). Cover the bottom of the crock pot with potato chunks. Season the potatoes to your taste using garlic salt & pepper.
  2. Brown ground beef with optional onion; drain fat. Pour mixture over the potatoes.
  3. Pour cream of mushroom soup over the beef layer. Then add the drained can of corn, carrots, and bell peppers. You can also now add whatever other vegetables you may have such as peas, green beans, or broccoli.
  4. Cover and cook on HIGH for 3 hours, stirring a few times. Turn to LOW, sprinkle shredded cheese on top, re-cover and cook for ~30 more minutes.
