  1. In a large mixing bowl combine warm water, sugar and yeast together. Allow to stand for 10 minutes to allow yeast to become foamy
  2. Mix in oil, salt and 2 cups of all purpose flour to make a dough of oatmeal consistency
  3. Slowly add whole wheat pastry flour to make a smooth dough that comes away from the sides of the bowl. Form into a round ball and put aside
  4. Lightly oil a large mixing bowl and place dough in to rise for 1 hour until doubled in bulk
  5. Punch dough down and place back into bowl to rise again for 45 minutes
  6. Preheat oven to 375 degrees Fahrenheit
  7. Prepare spinach leaves by steaming or boiling them until just tender. Set aside
  8. Drain excess water from leaves and chop them into small pieces
  9. Place chopped spinach leaves into a bowl with salt, grated cheese, egg and whole grain bread crumbs. Mix together well and set aside
  10. When dough has risen for a second time roll out on a lightly floured surface to the size of a 10 inch rectangle approximately 1/2 inch thickness
  11. Drop spinach mixture in the middle of rectangle and spread with a butter knife to the outer edges of dough leaving a 1/2 inch space around the edges
  12. Beginning at the wide end carefully roll up dough to form a round cylinder and join together the ends.
  13. Trim dough into 1/2 inch rounds and place side by side in a 13" by 9" by 2" baking pan
  14. Allow rolls to rise for 1/2 hour before baking in oven for 30 minutes until rolls are lightly browned
  15. Remove rolls from oven and spread cream cheese over top lightly with a butter knife while they are still warm.
