  1. In a saucepan bring water & chx broth to a boil. Add rice and stir. Reduce heat, cover and simmer for 20 minutes.
  2. Heat 1 teaspoon oil in large frying pan, pour in eggs, and add salt and pepper to taste. Cook eggs for about 2 minutes until over hard; remove and allow to cool. Ccut them into thin strips.
  3. Heat 2 teaspoon oil in large frying pan, add shallot, pepper, onion and peas and cook for 4 minutes, add soy sauce, wine, & rice mix. Break up any clumps and toss to coat with oil about 3 minutes.
  4. Stir in eggs and green onions. Stir and cook until heated through, approximately 3 minutes.
