  1. Tomato Sauce
  2. -Heat olive oil in a medium sauce pot on medium heat
  3. -Add garlic, stir, and cook 1-2 minutes until light brown
  4. -Add tomatoes, Italian seasoning and basil and stir
  5. -Simmer sauce 5-6 minutes or until tomatoes break down completely
  6. -Puree with a hand blender or in a blender
  7. -Season with Salt and Pepper to taste
  8. Pizza Dough
  9. -Put the water in the bowl of a mixer or large metal bowl
  10. -Sprinkle on yeast
  11. -Add olive oil and honey and stir once
  12. -Let sit about 3 minutes - yeast should look foamy
  13. -Add half the flour, salt and flax seed
  14. -Mix with a dough hook or with your hands
  15. -Add more flour until dough comes together but is still sticking to the bowl a bit
  16. -Knead until dough has a smooth appearance, adding flour as necessary
  17. -The dough should still feel a bit sticky
  18. -With flour on hands form into a ball, it should be smooth on top
  19. -Cover with a damp towel and let sit 1 hour
  20. -Roll out onto a floured board and form into a flat rectangle and let rest 3 minutes
  21. -Cut into 4-6 pieces and form each piece into a ball and let rest 5 minutes
  22. -Form each ball into a pizza round by hand or with a rolling pin as thin as desired
  23. To make pizzas
  24. Heat oven to 400 degrees
  25. -Put a cast iron skillet on medium heat and coat pan with olive oil
  26. -Put pizza dough round into pan and spread it out. Cook for a minute
  27. -Top with a light coat of sauce and add some mozzarella cheese and toppings of choice
  28. -Check dough on bottom and when it looks a little brown and crisp place pan in the oven
  29. -Bake 8-10 minutes or until cheese is melted and golden brown
  30. -Let pizza rest 2 minutes before cutting into slices
