  1. In a large pot, add one tsp of canola oil, leeks, celery, carrots and garlic and cook over medium-low heat for 15 minutes, stirring frequently and then transfer to a small bowl.
  2. Heat another teaspoon of oil over medium heat and saute the mushrooms
  3. Once the mushrooms begin to brown, add the red pepper
  4. Saute the mixture for another 5 minutes and remove vegetables to the small bowl
  5. Slice the chicken sausage into small pieces and saute in the pan over medium heat with the remaining oil until they are browned
  6. Remove and place into the small bowl with the vegetables
  7. Pre-heat the oven to 375 degrees
  8. Heat the butter over medium-low heat and stir in flour for about 3 minutes
  9. Heat the milk and chicken broth in a microwave for about a minute and a half on high
  10. Remove from microwave and gradually add to the flour mixture whisking often, until the mixture comes to a boil, about 4 minutes
  11. Add thyme
  12. Pour the sauce mixture over the vegetables and chicken in the bowl
  13. Add peas, sherry and parsley to the bowl and stir well.
  14. Place mixture in the pie shell and bake for about 20 minutes, or until the top is bubbling and golden brown.
