  1. 1. Preheat oven to 350 deg.F 2. In a casserole dish, spread on the bottom a little olive oil and wipe it around the dish 3. Add olive oil to a pan on the stovetop. Add half of your prosciutto and crisp it like you would regular bacon. When crispy, remove from heat and pat the excess grease with a paper towel and break into smaller pieces 4. Slice the potatoes (after washing, pat-dry with a paper towel) lengthwise thinly. Lay the potatoes on the bottom of the dish 5.Slice 1/2 ofthe mozzarella in thin pieces and layer over the potatoes 6. Add another layer of potatoes and drizzle olive oil over the layers. 7. Add cooked prosciutto over this layer 8. Add sliced tomatoes around the edge of the dish 9. Add mushrooms on top 10. sprinkle the last five ingredients over the whole dish. 11. Add remaining sliced mozzarella over the top 12. Cover with aluminum foil and cook. 13. Last 10 min I uncovered and broiled the top.
