Original recipe yields 24 servings

  1. Preheat oven to 350.
  2. Spray 2 4x6 inch loaf pans with Non Stick Spray.
  3. Grate Zucchini and add to mixing bowl. Add Remaining ingredients and mix on low speed until batter is thoroughly mixed together.
  4. Divide batter between the two loaf pans and bake in a 350 degree oven about 40 minutes or until toothpick inserted in center comes out clean. Cool and eat. Moist and delicious. I don't know how well it stores, it doesn't last that long here!
