  1. 1. Boil water with a pich of salt. Add quinoa and simmer for 15 min. Let cool.
  2. 2. Mix quinoa, tomato, carrot, onion, mint and parsley in a bowl.
  3. 3. Wisk oil, lemon juice, salt and pepper and combine with the quinoa and vegetables. chill for 30 min. to enhance the flavors.
