  1. First you will need to sort and soak pinto beans (you can use anasazi beans, red or black beans...it is really up to you) I usually do this the previous night so I can slow cook it all day the following day.
  2. In the morning you saute and brown garlic cloves and onion in bacon grease. You can either dice/mince onion and garlic up or cut it in halves/quarters like I do.
  3. While Onion and garlic is sauteing you can rinse beans in a colander and place them in crock pot. then place smoked pork shank or neck on top of beans (no cooking of pork is required as it is smoked already and will be sitting in crock all day)
  4. When onion and garlic are golden brown pour the bacon grease/onion/garlic mixture over beans and pork in crock pot.
  5. now place about 8 cups of water in slow cooker (or until water is to top of cooker).
  6. Set on high for 6 hours or low 8-12 hours and beans should be ready.
  7. Cumin can be lightly dusted into crock pot 30 minutes before it is finished.
  8. This is a favorite in our home and I usually make fry bread with it.
