  1. Preheat oven to 350 degrees.
  2. Spray a roasting pan with cooking spray. I use stone in a loaf pan, so I skip this.
  3. In a mixing bowl, add beef, onions, peppers, garlic, egg whites, breadcrumbs, stock, salt, and pepper. Hand mix mixture together.
  4. Add 1/2 of the mix into the bottom of the pan, flatten.
  5. Once it's flattened add mozzarella cheese to the center, Add the remaining 1/2 mix to the top, form a loaf over the cheese. Once it's formed take your bacon strips and wrap around the loaf spreading about an inch apart and tucking the edges under the bottom of the loaf. Place in the center of the oven and bake for about an hour, remove.
  7. add brown gravy to the top (Mix, store bought or homemade is fine). Bake for another 20 minutes at 300 degrees to let the gravy soak in.
