Seven Minute Frosting III


"This is my grandmother's recipe for marshmallow-like 7 minute frosting. Quick and easy and so much better than store-bought marshmallow fluff. Delicious on angel food cake, butter cake, and chocolate cake. Yum!"

  1. Fill the bottom of a double boiler halfway with water and bring to a boil. The top should not touch the water.
  2. While you wait for the water to boil, combine all ingredients and beat on low speed with an electric mixer for 30 seconds.
  3. Place over boiling water and cook while beating constantly on high speed for 7 minutes or until frosting forms stiff peaks.
  4. Remove from heat. Add vanilla extract and beat an additional 2 or 3 minutes until frosting reaches a spreadable consistency.
  5. Spread over cooled cake.
