  1. Combine Chicken, taco seasoning, 4-5 larger pieces of tomatoes from the can, all the juice you can squeeze out of the can, and water in a large sauce pan.
  2. Boil on high until chicken is browned, then reduce to low heat and cover the pot.
  3. Cook on low heat for about 2 hours, stirring occasionally.
  4. Remove any big chunks of tomatoes that haven't broken up.
  5. The chicken can be shredded easily with 2 forks or with a potato smasher.
  6. Bring the heat back to medium high and keep stirring until all or most (depending on your preference) of the juice is absorbed into the meat.
  7. Put the chicken on your tortillas, add desired toppings and enjoy!
