  1. Instructions:
  2. Grate zucchini onto paper towels to release the water.
  3. Combine all ingredients (except sour cream and lemon wedges) in bowl, blend well.
  4. Heat small skillet over low heat 1 minute, lightly spray with cooking spray or olive oil.
  5. Spoon 2 tablespoons of butter into skillet
  6. Cook 2-3 minutes on each side.
  7. Serve with desired garnish.
