"Tender, juicy and most of all delicious; those are the three main compliments I always receive when I prepare this dish. The flavor that the beer, onions and garlic bring out with the steak is amazing!"
In a large cast iron or non-stick skillet; heat the oil and butter until just bubbling.
Add the garlic and the onions, cover and cook for 10 to 12 minutes; occasionally stirring to prevent burning or sticking.
When onion mix is lightly browned remove from pan with a slotted spoon leaving as much of the juices in the pan as possible and set aside.
Salt and pepper one side of your steaks and place them in the pan you just removed the onion mix from - seasoned side down. Cook for about 4 to 6 minutes; season the other side of the steaks with salt & pepper.
When steaks are just beginning to brown on the first side; remove from the pan with tongs and place on a plate - cooked side down.
Return the onion mix to the pan, lower the heat to medium and add the 12 oz of beer carefully. Bring back to simmering.
Return the steaks back to the pan uncooked seasoned side down - and nestle into the onion brew. Be sure that steaks are mostly covered with onion brew liquid and mix.
Cover and cook for 45 minutes or until desired doneness is achieved. My family does not like pink in their steaks, so this time I am showing is a well-done steak.
Remove, plate and serve with hot onion brew drizzled over the steaks.
