  1. Bring water to a boil, drop in noodles and turn off heat. Let noodles sit 5 min then drain
  2. Marinade chopped chicken in 2tbsp soy sauce in bowl, set aside.
  3. Heat cooking oil in wok, stir in garlic, ginger, whites of green onion, and chilli sauce. Stir fry 1 min.
  4. Add chicken, shrimp, and spoon sauce if too dry. Push aside in wok and add egg to scramble.
  5. Continue to stir fry and add fold in noodles and thai sauce. Add bean sprouts and remaining green onion and fish sauce. Noodles should have a thick almost sticky consistency.
  6. Stir in peanut butter. Add chilli sauce or additional fish sauce to taste.
  7. Serve with wedge of lime if desired.
