Cheese stuffed mini peppers

  1. Preheat oven to 350 degrees and place rack in center of oven. In a mixing bowl, combine the cheeses, bacon and green onions. Add salt and pepper to taste. Set aside.
  2. Cut off the tops of peppers and remove the veins and seeds. Using a teaspoon, fill each pepper with the cheese mixture. Place the peppers on a greased baking sheet and bake in oven for 12 to 15 minutes until peppers start to soften. Remove from oven and cool the peppers before arranging them on a platter to serve.
