  1. 1. Fill a large pasta pot with salted water and begin to boil over high heat.
  2. 2. In a large soup pot or dutch oven combine the sausage, garlic, onion, peppers. Cook over mediumhigh heat until the sausage is browned and crumbled. Spoon off excess grease.
  3. 3. Stir in dried herbs, sugar, broth, tomatoes, tomatoe sauce, salt and pepper to the meat mixture. Bring to a boil over medium-high heat. Lower heat and simmer 20 minutes.
  4. 4. Add pasta to the boiling water and cook until al dente. Drain.
  5. 5. Add pasta to the soup after the simmer time. Stir in parmesean cheese. Taste, and salt and pepper accordingly.
  6. 6. Ladle into soup bowls and top with mozzarella cheese, if desired.
