  1. 1. Spray frying pan with cooking spray then set over medium heat on stove.
  2. 2. Crack egg over pan and scramble with fork. Sprinkle with pepper. Toast muffin or bread until golden in toaster.
  3. 3. While scrambled egg is cooking, toss in onion and tomato. Once egg is done turn off heat and let cheese melt over egg.
  4. 4. Lay egg and cheese on one slice of bread or muffin and sprinkle spinach on. Top with other half of muffin or toast. Spread butter on top of sandwich for extra flavor.
