"A very light and tangy salad with pickled onions and pinto beans to give it some added fibre for your meal."

  1. Rinse and clean 5 to 6 chard leaves under cold running water, break into bite size pieces into a large salad bowl
  2. Cook rotini pasta according to package directions. Rinse under cold running water and then add to chard in the large bowl and mix together
  3. Cook pinto beans in a small saucepan and bring to a boil. Drain liquid from beans and run beans under cold water for a few seconds. Set aside
  4. Slice grape tomatoes and add to salad bowl along with drained pinto beans. Mix well.
  5. Add pickled onions to salad mixture and serve with your favourite vinaigrette dressing.
