Original recipe yields 4 servings

  1. In a saucepan, heat olive oil over medium-high heat until hot. Add garlic and sauté for about 2 minutes.
  2. Add the broth and bring to a boil. Reduce heat to medium-low. Gradually wisk in the cornmeal. Cook until the polenta is thick, about 5 minutes. Lower the heat to low and add the cheese and milk.
  3. In a separate pan melt the butter over medium heat until it begins to froth. Stir in the chopped basil and cook for about 1 minute.
  4. Add the basil to the polenta mixture. Season with salt and pepper to taste. Serve immediately.
