  1. Preheat oven to 500 degrees
  2. Coat tortillas with oil and bake for 5 to 7 minutes on a cookie sheet. Cool.
  3. Brown ground beef with onion and diced chilies and add taco seasoning according to directions.
  4. Coat bottom of 9X11 baking dish with thin layer of Enchilada Sauce and pour remaining in a large bowl.
  5. Dip each individual tortilla in the Enchilada Sauce in bowl.
  6. Add one tortilla at a time, adding 2 to 3 tbls of ground beef and top with cheese.
  7. Fold one side over the other and turn over, folded side down.
  8. Top all with remaining Enchilada Sauce and shredded cheese.
  9. Bake at 400 degrees for 10 to 15 minutes or until cheese is melted.
  10. Serve with shredded lettuce, diced tomatoes, sour cream and refried beans and/or Mexican rice.
