"I've been trying to make a perfect Strawberry Cupcake to go with the Real Strawberry Frosting recipe I developed a couple of years ago. It's been a long road and lots of cupcakes tested and tasted along the way. I think I have finally got the recipe. It works every time I make it. The trick was NOT using puree as I do when making the frosting. Rather, it was changing the texture of the strawberries into a powder that brought this cupcake recipe out of my test kitchen and into my recipe box! I am pleased with the results!"

  1. Preheat oven to 350 degrees
  2. Sift together first 6 ingredients in a bowl.
  3. Cream together butter and sugar until light in color and fluffy.
  4. Add eggs in one at a time. Beat until well mixed.
  5. Add vanilla.
  6. Beginning with flour mixture add 1 cup to creamed butter and eggs, then 1/3 cup milk, then 1 cup flour, then 1/3 cup milk, ending with the remaining flour. MIX ONLY UNTIL JUST MIXED & MOIST!
  7. Fill lined tins with cupcake batter.
  8. Bake 8-10 minutes for minis or 16-18 minutes for standard sized cupcakes depending upon your oven temperature.
