  1. - Cut apples in half along core. Hollow out halves using a melon baller or spoon and remove inedible ends. Immediately squeeze lemon juice on top to reduce browning.
  2. - Whisk 1/2 cup water with hot chocolate envelope in a medium sized sauce pan till combined.
  3. - Continue whisking while adding 1/2 cup of coconut milk till thoroughly combined.
  4. - Sprinkle gelatin on to top of mixture and cook for 2 minutes.
  5. - Turn on stove to low/medium and mix in the gelatin until thoroughly combined.
  6. - Add 1/4 cup sugar and simmer slightly until sugar is combined.
  7. - Add food coloring to your liking and remove from from heat.
  8. - After the mixture has cooled to warm, pour in your chosen alcohol.
  9. - Arrange apples onto a cookie sheet so they fit tightly and secure.
  10. - Pour caramel jello mixture into apple halves.
  11. - Refrigerate overnight.
  12. - To serve, cut halves in quarters and those quarters in half again, trim off any part of the apple that has browned and serve immediately.
