  1. Preheat oven to 350 degrees; prepare a muffin pan by lightly greasing with olive oil or with muffin cups.
  2. In a large bowl, combine the dry ingredients.
  3. In a medium bowl, combine the rest of the ingredients, except for the kiwi.
  4. Stir the ingredients in each bowl, then pour the wet mixture into the dry, mixing until just combined.
  5. Fold in the chopped kiwi.
  6. Pour mixture into muffin pan, filling each cup about 3/4 of the way.
  7. Bake about 20 minutes or until done.
