Tuna Bread


"I know, it sounds strange. Who in the world has ever heard of bread made of tuna?! That was my reaction too when I saw the recipe hidden in the newspaper ads a couple of weekends ago. It looked ridiculously simple, though and I figured I had to give it a shot. Now, the recipe says it serves 8 people but I figure it means ‘as an appetizer’. I centered a lunch around it and it was barely enough to feed all four of us."

  1. Preheat oven to 300° (150° c)
  2. Place all ingredients in a blender and pulse until it is smooth and liquid.
  3. Adjust the seasoning with salt and pepper to suit your tastes.
  4. Pour into a bread pan (the same size that you would use for banana bread). If the pan is silicone, you don’t have to worry about greasing it. If the pan is metal, oil it lightly.
  5. Place the pan in the oven and let it cook for an hour or slightly less.
  6. Remove and let cool.
