  • Cook

  1. Put the egg whites over a double boiler and whisk quickly, until stiff peaks form. (an electric hand mixer works very well for this)
  2. Take off heat and set aside
  3. Mix lime juice, sugar and food coloring until the sugar has dissolved.
  4. Slowly fold in the lime mixture to the egg whites
  5. Put the mousse in glasses and chill
