  1. stir bread crumbs with seasonings. In separate bowl mix milk, hot sauce and mayo. Place flour in third bowl.
  2. Arrange the bowls assembly line style. dip the chicken first in the flour, then the milk, then the bread crumbs. Place onto a large plate. Discard leftover dippings.
  3. Start the oil heating (med-high) in a deep sided pan while you do the dishes. When oil is hot a droplet of water will dance and sizzle. drops of water will spit and burn the house down.
  4. Fry the chicken (do not crowd in pan) about 4 min, until a meat thermometer reads 165*F or higher.
  5. Place chicken on wire rack above paper towels to drain and cool
