In a bowl, combine the eggs, mayonaisse and salsa.
In small pan, saute diced onion and red pepper in canola oil until tender.. 3-5 minutes. Add to egg mixture. Add chili powder, cumin, cayenne pepper and salt & pepper.
Add Canadian Bacon slices to pan and saute until brown around edges..3-4 minutes.
Place English muffins cut side up on an ungreased baking sheet. Top each with a slice of Canadian bacon, 1/8 of egg mixture and mexican cheese blend. Bake at 350 degrees F for 8-9 minutes minutes or until cheese is melted. Top with chopped cilantro , if desired and provide extra salsa on the side
