"This is a version of the popular snowball cookies. Cherries, coconut, and walnuts have been added. They are easy to make, not overly sweet, and make a pretty festive pink color inside from the addition of the chopped marachino cherries."

  1. Pre-heat oven to 350 degrees.
  2. Line a large baking sheet with parchment paper.
  3. Cream the butter and the 4 tablespoons of powdered sugar until smooth.
  4. Beat in each dry ingredient, the flour, coconut, oatmeal, walnuts, and salt, until incorporated about 5 seconds each.
  5. Add the small chopped cherries and beat 25-30 seconds more or until dough comes together and starts to tint from the cherries.
  6. Make level mounded cookies using a cookie scoop and evenly space out on the cookie sheet.
  7. Bake 18 minutes, there will only be slight golden spots. Do not overbake.
  8. Remove from the oven, and while still warm roll in the 1 cup of powdered sugar. Repeat step after all the cookies have been coated once.
  9. Enjoy!
