"I made this for both of my sons first birthday's. I didn't want to give them a super sugary cake but wanted them to have a special treat. Not only did the kids love it, and the adults wanted the recipe. Score!"

  1. 1. Preheat oven to 325.
  2. 2. Prepare 8" round cake pan by lightly coating with grease or cooking spray and dusting with flour.
  3. 3. Combine pumpkin, eggs and sugar in large bowl.
  4. 4. Add flour, cinnamon, baking powder, ginger and salt, stiring together.
  5. 5. Add apples and nuts; pour into pan.
  6. 6. Bake 20-25 minutes, until toothpick comes out clean.
  7. 7. Cool cake in pan or on wire rack for 10 minutes.
  8. 8. Invert cake on wire rack, remove pan and cool completely.
  9. 9. Once cooled, turn right side up and dust with powered sugar.
