Spicy Tilapia and Feta Fish Cakes

"Healthy fish dishes do not have to be boring. I love crab cakes...I have made tuna cakes...so why not tilapia cakes? Add some feta and hot sauce and really make it an interesting fish dish."

  1. Heat a large skillet to medium-high heat. Add tbsp of oil.
  2. Add tilapia fillets, add salt and pepper and cook for approx. 2 minutes on each side. Turn off the heat, and shred the fish.
  3. Toss the shredded fish and all other ingredients in a bowl.
  4. Form patties with your hand and refrigerate for at least 1 hour.
  5. Set a skillet to medium-high heat. Add 1 tbsp of oil.
  6. Cook patties approx. 1-2 minutes each side until golden brown.
