  1. Preheat oven to 375 degrees Fahrenheit
  2. Grease a cookie sheet and set aside
  3. Combine sugar and butter together and beat with an electric mixer until smooth and creamy
  4. Add eggs one at a time beating after each addition. MIx in oat bran, dried prunes and crystallized ginger beating with electric mixer until ingredients are well coated and mixture holds together well.
  5. In a medium size bowl combine flour, Baking Powder and Baking Soda stirring until all dry ingredients are mixed together.
  6. Stir the dry ingredients into the wet mixture and form a smooth ball with the dough then drop by teaspoon on a greased cookie sheet 2 inches apart and bake for 8 to 10 minutes in pre heated oven.
