  1. Heat the oil in a large pan, add the chicken and brown all over. Season with salt and cayenne pepper then arrange the pieces in a baking pan and sprinkle with the pimento, onion and tomato. Bake in an oven pre-heated to 200°C until cooked and golden brown (about 50 minutes). If desired you can cover the chicken during the first part of the cooking time.
