Wisk first 6 ingredients in small bowl until loose and slight frothy. Mix dry ingredients in separate bowl and add to egg mixture. Mix with wisk until smooth and shiny. Pour into greased pan and twirl and tilt pan until evenly covered. Bake for 6-9 mins. Turn oven off.
Remove cookie from pan with plastic spatula. Immediately add fortune and fold cookie in half. With folded edges on top, bend cookie over side of a large bowl by pulling ends down. Once cookie is formed, return to oven with door open until crisp.
