  1. Cut sweet potatoes into wedges, place on rack in a baking sheet.
  2. Bake for 30 minutes at 325 degrees
  3. Remove and cool potatoes in a bowl
  4. Replace baking sheet to oven and preheat to 425 degrees
  5. Season potatoes with little olive oil, salt, sugar and seasonings and make sure they are well coated
  6. Return to baking sheet in oven for 15-20 minutes.
  7. Serve
