  1. Place chicken breast in pan and salt and poke with a fork 2-3 times.
  2. Cover tightly with foil and bake at 275 degrees for 30-40 minutes till 150 degrees on a meat thermometer.
  3. Remove from oven and if moist pat dry.
  4. Sear in a very hot pan with a little olive oil and sear 3 minutes on each side or till 165 degrees on meat thermometer.
  5. Serve
