Healthier Carrot Oatmeal Cookies

"This makes a relatively healthy, cakey cookie that is a bit like a mix between carrot cake and oatmeal cookies. I adjusted a few different recipes to use less sugar and more oats and carrots so that I don't feel too bad eating these for breakfast (which I can't resist)!"

  1. 1. Preheat oven to 375º F.
  2. 2. Cream the butter and the honey. Then add the eggs and the carrots and mix well.
  3. 3. In a large bowl sift together the flours, baking powder, baking soda, salt, cinnamon, and nutmeg.
  4. 4. Add the dry ingredients to the wet ingredients and mix.
  5. 5. Add the oats and the raisins, mixing until well distributed.
  6. 6. Drop batter by large spoonful onto a parchment lined cookie sheet and flatten/shape with a fork if desired.
  7. 7. Bake at 375ºF for 15 minutes or until tops are a golden color.
