  1. Prepare kale by rinsing, de-ribbing, and finely chopping/shredding it. Set it aside.
  2. Mix crushed pineapple (with juice), lemon juice, and sunflower oil together. Pour over kale and toss.
  3. You can add nuts, fruit, or freeze-dried fruit if you wish, but be sure to add any freeze-dried fruit last or it will lose it crunch.
