In a large saucepan, heat oil over medium-high heat. Sauté onions, bell peppers, and celery until onions soften.
Add ground turkey, recaito/sofrito, garlic, all spices/seasonings except the brown sugar and cocoa powder. Brown meat, sitrring occassionally, approximately 5 minutes.
Add diced tomatoes, tomato sauce, mustard, jalapenos, olives, corn and carrots. Simmer for 5 minutes. ***Depending on how thick you like your chili, you may want to add some water at this point but I would start with no more than 1 cup since the veggies will release their own water. You can always add more water or broth later if the chili is too thick. ***
Add cocoa powder, brown sugar and beans and simmer on medium-high, uncovered for an additional 5 minutes.
Turn heat down to low, cover and simmer for 50 minutes...or longer. The slower & lower, the better! ***Don't forget to remove the bay leaves after cooking since these are NOT edible.***
