Prepare a 9-inch by 13-inch casserole dish by either coating with a non-stick spray or with oil. Set aside.
Cook the 85% lean ground beef until no longer ping or until just lightly browned. Drain well, crumble to desired "chunk-sized" pieces and set aside to cool slightly.
Carefully open one corner to the top of both 16 ounce Doritos® packages. Fold back to allow air to escape but keep contents from spilling out. Either with your hands or with a small rolling pin, crush the Doritos® in both packages until about to ¼ inch to ½ inch sized pieces. Set both packages aside.
In a large mixing bowl, combine the Rotel® Tomatoes, condensed cream of mushroom soup, beef broth (rinse soup cans into mixture using beef broth) and 1½ cups of crushed Cool Ranch Doritos®. Stir until well combined.
Spread between 1 and 2 cups of the crushed Cool Ranch Doritos® evenly over the bottom of the prepared casserole dish, to about a ¼ inch layer. Sprinkle 1 to 2 cups of the shredded cheese over the crushed Doritos®, evenly layer approximately half of the crumbled beef over the cheese layer. Next, layer approximately half of the Rotel® Tomatoes and soup mixture over the top of the beef.
Repeat step 6; begin by layering between 1 and 2 cups of the crushed Doritos® evenly over the top of the Rotel® Tomatoes and soup mixture.
Top the last layer of Rotel® Tomatoes and soup mixture in step 7 with remaining crushed Doritos® mixed with shredded cheese.
Bake in preheated oven for 45-minutes or until level your level of desired brownness is achieved. Remove from oven and allow to sit 10 to 15 minutes before slicing and serving.
