Shred the carrot. Add oil to a small sized pan on medium heat and add the carrot. Add a pinch of salt and fry for 3-4 minutes. When cooked, set aside.
Re-add oil onto the pan and add the green onions, as well as the green peppers. Fry for 5 minutes or until cooked (if you prefer softer green peppers, then let it cook a little longer). Once cooked, set aside to where the carrot are.
Re-add oil onto the pan and add the mushrooms, salting it by taste. When finished, add to the other cooked vegetables. In boiling water, add spinach and then quickly turn off the heat. The spinach will continue to cook. Once it's all welted, cool in cold water to stop cooking. Squeeze out liquid and roughly chop it up, then add 1 tbsp sesame seed oil, 1/2 tbsp sesame seeds, 1 tbsp soy sauce and mix.
In the same saucepan, re-add the oil and add the meat. Season the meat by adding salt and pepper to taste. Cook for 5-10 minutes or until cooked. When finished, add to the vegetable mixture.
In a large bowl of boiling water, add the noddles and cook for 7-10 minutes or until cooked. Once ready, drain the noodles. Place the noodles into a large saucepan on medium heat while adding oil and soy sauce (approximately 1/4 cup). Fry for 2-3 minutes then add to the vegetable mixture.
In a large bowl, mix all of the ingredients while adding 1/2 sesame seed oil, lots of sesame seeds, 2 tbsp of soy sauce and salt/pepper to taste.
