  1. Wash, and begin cooking rice in 4 cups water. 30-40 minutes.
  2. Chop, and slice vegetables, set aside in order of use.
  3. On separate cutting board prepare chicken. Peel shrimp if necessary.
  4. Heat 1 tsp oil in wok, pour in beaten eggs, swirl around to a thin layer, cover and cook until set. 2-3 minutes Fold in half, remove to cool on a cutting board. Cut into thin strips.
  5. Heat more oil in wok, in order, stir fry tender crisp: onion, leek, red pepper, garlic. 5 minutes. Stir in cumin, coriander, cayenne & chili sauce. Remove to a bowl.
  6. In the wok, brown chicken in more oil, cook through, 5 minutes. Add shrimp and cook only until they change colour, 1 minute
  7. Stir in the cooked rice, Kecap Manis sauce, vinegar, and the reserved vegetables.
  8. Toss to coat. Fold in spinach or greens and egg strips. Cover and heat until greens wilt and rice is hot. 2-3 minutes.
