  1. Preheat oven to 400.
  2. Wash and prick potatoes. Bake for 40-50 mins until cooked through. Let cool.
  3. Coat cubed chicken in ranch dressing mix and cook in oil in hot skillet for 5-10 mins until cooked through.
  4. When potatoes are cooled, cut in half lengthwise and scoop out insides, leaving about a 1/2 inch shell.
  5. Place insides into medium bowl and mix with prepared ranch dressing until creamy. Add chicken, bacon pieces, and 3/4 cup of cheese.
  6. Stuff potato skins with chicken mixture.
  7. Place stuffed potatoes on pan and bake at 400 for 20-25 minutes until heated through and golden on top. Top with remaining 1/4 cup of cheese and cook until melted.
  8. Garnish with chives and serve.
