"This was adapted from the Oreo Truffle recipe. Everyone loves peanut butter and chocolate so I decided to try it with peanut butter cookies and chocolate coating."

  1. In a food processor, crush cookies until no large pieces remain.
  2. Mix cookie crumb mixture with 8 oz softened creamed cheese (or peanut butter) until well blended and a soft dough has formed.
  3. Form dough into balls about 1" in diameter. Place balls on parchment paper on a cookie sheet and place in the freezer for approximately 10 minutes until firm.
  4. Heat chocolate in a microwave safe bowl for 1 minute; stir and return to microwave for 30 seconds. If not completely melted, microwave in 15-20 second increments stirring in between.
  5. Dip balls in melted chocolate and place on parchment. Return to freezer to set (approximately 5 minutes). Store in airtight container.
