Cherry Farro Salad with Sweet Vinaigrette

  1. Pour 2 1/2 cups chicken broth in a medium size pot, add farro, dried herbs and bring to a boil, turn to medium heat and cook for 10 minutes or according to the package directions. Turn off heat, cover with a lid and let it sit in the liquid until most of the liquid is absorbed (about 30 minutes).
  2. Transfer into a glass bowl, when cooled add the cherries, celery, walnuts and parsley, stir in marinade. Chill before serving.
